This month we learn about French vermouth from Francois Monti and what makes it special, how it differs from Spanish or Italian vermouth and different drinking suggestions. We talk specifically about the process used by well-known French vermouth brand Noilly Prat as well as the Chambery style of vermouth like Dolin.
François Monti is a Madrid-based Belgian drinker who also writes. He is the author of three books, including El gran libro del vermut and is considered an authority on aperitivo culture and aromatized wines. His writing has appeared in many publications worldwide and he was named as one of the 100 most influential persons in the bar world in 2019. He is also the World’s 50 Best Bars Academy Chair for Spain and Portugal.

Cocktail of the Month: Vermouth Cassis
1/2 ounce / 15 ml Crème de cassis
3 ounces / 90 ml dry vermouth (preferably a French brand)
Sparkling water
Pour crème de cassis and dry vermouth into a tall glass
Fill with ice
Top with sparkling water
Garnish with a lemon twist
This is a simple and sessionable cocktail that doesn’t take any special equipment and can be adjusted in terms of sweetness with the Creme de cassis
