This month we learn about elderflower in cocktails and its evolution as an ingredient and flavour, how it was historically used beyond cocktails and cuisine and how it’s being used today with founder of SurO, Lucinda Prior. SurO is a homemade, natural non-alcoholic sparkling elderflower drink, which can also be used as a mixer.

40ml gin

100ml of SurO (or other elderflower soda)

3 drops Angostura bitters

Pour gin into a glass filled with ice. Top with 100ml of SurO. Add bitters.
